When you work hard all day, it’s hard to resist the urge to indulge now and again. For some it’s drinking a nice glass of wine, for others it’s enjoying a sweet treat. As scrumptious as desserts can be, they can also be a little hard on the hips or midsection. But if you find or create your own special recipes, you’ll get to enjoy your dessert but keep it off of your waistline. Here are just a few ways to make your own healthy and easy desserts.

First and foremost, baking should never be a tedious process. In fact, I have found baking to be a relaxing escape from reality as long as I allow myself the room to be inventive. One way I have done this is by purchasing boxed dessert mixes and then altering the additional ingredients to come up with something altogether different than what the box is meant to produce.

Here’s a fun cookie recipe to try that starts with a box of double chocolate cake mix. With a few minor adjustments you can easily create pancake cookies, and they will even be low fat too. All it takes is combining your mix with one half cup of soymilk, 2 caps of vegetable oil and a little water. Mix until the consistency is like cookie dough, then spoon on a pan and bake in the oven for about 10 minutes. If the cookies become too puffy during baking, just take a spatula or fork and flatten them to look more like pancakes. Once they’re done, remove and cool on a cooling rack.

As they cool, cut up some fresh strawberries and then take one of the cookies and sprinkle the fruit on top. If the cookie is still warm, it will have a very soft texture and will blend nicely with the fruit. I suggest also grabbing a glass of nice, cold soymilk to compliment the chocolate taste, Grab a fork and enjoy!

You can also take a batch of your favorite granola and combine them with some of you favorite mixed berries. You’ll want to first heat the berries in an oven for a few minutes so they are soft and warm. Meanwhile, combine the granola with a small amount of soymilk and microwave the mixture for a minute or so. Take your warm fruit and place it on top of the granola, stir and enjoy. This is a nice special dessert to enjoy with a warm soothing tea.

Now that we are again facing the cold winter months, our minds are turning toward the food that can keep us warm when we’re home with our families at night.
